Spinach & Swiss Omelet
This hearty, healthy breakfast is sure to keep you satisfied; the eggs and cheese help pump up the protein.
Total Time: 10 minutes
1 oz spinach, raw
2 large eggs, whole
1 med grapefruit
1 large egg, white only
1 oz or 1/4 cup shredded cheese, Swiss, reduced fat
1. Warm a sauté pan over medium heat and spray with cooking spray.
2. Beat eggs and cook. Before completely set, add spinach leaves and shredded Swiss cheese and fold.
3. Serve with grapefruit on the side.
