Pineapple Chicken Skewers with Grilled Zucchini

Servings: 1



6 oz (170g) chicken breast

1/4 fresh whole pineapple

1/2 medium bell pepper

1/4 medium onion

2 tsp olive oil

1 medium zucchini



  1. Cube chicken and cut pineapple, bell pepper and onion into chunks.
  2. Place cubed chicken, pineapple chunks, bell pepper chunks, and onion chunks on skewers and brush with oil.
  3. Grill until the chicken is cooked through. Grill zucchini and slice after grilling. Serve zucchini on the side.



1/2 whole – 1/2 cup bell pepper

1/4 whole – 1/4 cup chopped onion

1/4 whole – 3/4 cup cubed pineapple
