Pasta Salad with Chicken Recipe

This Pasta Salad with Chicken is the perfect fresh dish to bring to a backyard barbecue – just increase the ingredients in this recipe depending on the number of servings needed!

4 oz chicken breast, boneless/skinless
1 oz or 1/3 cup dry pasta, whole-wheat
8 cherry tomatoes, red and yellow
6 olives, pitted
2 green onions, sliced
2 Tbsp fresh basil, chopped
3/4 tsp olive oil
1 Tbsp lemon juice
2 Tbsp hummus
1 Tbsp capers
1 Tbsp feta cheese, crumbled
1/8 oz (3/4 tsp) pine nuts


1. Boil and shred chicken breast.

2. Prepare pasta according to package directions. Rinse in cold water and drain well.

3. Slice tomatoes and olives in half.

4. Gently toss all ingredients together with the chicken and pasta.
