Lime Chicken Salad with Grapefruit and Spinach Recipe
Enjoy this refreshing Lime Chicken Salad with Grapefruit and Spinach dish just in time for spring. Grapefruit and strawberries add lots of vitamin C to this recipe, making it healthy and delicious!
1 cooked chicken breast (approximately 4 ounces)
1 whole lime, sliced
1/2 tsp black ground pepper
salt to taste
1 whole scallion, diagonally sliced
1/2 large grapefruit, peeled and sectioned out
2 cups fresh spinach leaves
1 tbsp fresh cilantro, chopped
5 whole strawberries, sliced
1 tsp olive oil
8 whole Kashi® Snack Crackers
1. Dice your chicken. Place the chicken in a large bowl, squeeze ½ of the lime over the top to taste, and sprinkle with salt and pepper.
2. Add the prepared scallion, grapefruit, spinach, cilantro and strawberries.
3. Squeeze the remaining 1/2 lime over the salad and drizzle with olive oil.
4. Serve salad with crackers. Enjoy!
