Lime Chicken Salad with Grapefruit and Spinach

Enjoy this refreshing meal just in time for spring. Grapefruit and strawberries add lots of vitamin C to this recipe making it healthy and delicious!

Serves 1


1 cooked chicken breast (approximately 4 ounces)
1 whole lime, sliced
1/2 tsp black ground pepper
salt to taste
1 whole scallion, diagonally sliced
1/2 large grapefruit, peeled and sectioned out
2 cups fresh spinach leaves
1 tbsp fresh cilantro, chopped
5 whole strawberries, sliced
1 tsp olive oil  
8 whole Kashi® Snack Crackers


1. Dice your chicken. Place the chicken in a large bowl, squeeze ½ of the lime over the top to taste, and sprinkle with salt and pepper.

2. Add the prepared scallion, grapefruit, spinach, cilantro and strawberries.

3. Squeeze the remaining 1/2 lime over the salad and drizzle with olive oil.

4. Serve salad with crackers. Enjoy!
