Honey-Glazed Salmon Salad
Enjoy this fresh salad alternative for lunch, dinner or to take to an afternoon barbecue! This is a healthy way to enjoy greens and protein this summer.
– 1 tbsp honey
– 6 chopped almonds
– 2 tbsp Parmesan cheese
– 2 tbsp salad dressing, light
– 2-4 cups spinach, raw
– 6 oz – salmon filet
– 12 tbsps dried cranberries
- Preheat grill to medium high. Brush salmon with honey and grill for 15-20 minutes or until fish flakes easily with a fork.
- Serve salmon atop spinach with chopped almonds, dried cranberries and Parmesan cheese, drizzled with dressing.
