Fresh Fish Tacos Recipe

This is a quick and easy twist on traditional fish tacos with a little spice from fresh, homemade salsa.

Ingredients: 

  • 6 oz mahi-mahi
  • 3 corn tortillas
  • 1 tsp olive oil
  • 34 cup black beans

Salsa:

  • 14 cup chopped tomato
  • 2 tbsp minced onion
  • 1 tbsp minced cilantro
  • 1 jalapeno
  • 1 tbsp lime juice

Directions: 

  1. Brush mahi-mahi with olive oil.
  2. Grill or broil until cooked through and flaky. Combine chopped tomato, minced onion, minced cilantro, lime juice and jalapeno to taste.
  3. Serve the fish with 3 warm corn tortillas and the salsa with cooked black beans on the side.
