Black Bean Tortilla Soup

This Black Bean Tortilla Soup is a spicy and warm meal perfect for cool nights.

Ingredients: 

  • ¼ cup onion 
  • 1 whole garlic clove
  • 1/2 tsp cumin 
  • 2 tsp olive oil  
  • ¾ cup cooked black beans   
  • 1/4 cup salsa 
  • 2 cups reduced sodium vegetable broth / stock
  • ½ cup mushrooms 
  • ¼ cup corn 
  • 1 tbsp lime juice  
  • 1 whole jalapeño pepper
  • ½ cup cheddar low fat, shredded/grated cheese   
  • 1/4 medium avocado 
  • 6 whole corn tortilla chips

Directions: 

  1. Dice onion and mince garlic. Sauté diced onion, minced garlic and cumin in oil in a large saucepan over medium heat until the onion begins to soften. 
  2. Add salsa and cook for 2 minutes. Add black beans, vegetable broth, mushrooms, corn, and lime juice to the pot. Simmer for 5 minutes. 
  3. Slice jalapeños and add for extra heat. Crumble tortilla chips on top and enjoy.
