Kick your takeout cravings with this low fat Chicken Quesadilla recipe.
4 oz chicken breast
1 whole wheat tortilla (8 in.)
1/2 cup low fat cheddar cheese, shredded
1/4 medium onion, chopped
1/4 medium tomato, chopped
2 tbsp chunky tomato salsa
1. In a large pot, bring water to a boil. Cook the chicken breast in the boiling water for about 10 minutes or until cooked through. Shred chicken breast.
2. In a skillet over medium heat, sauté onions and tomatoes.
3. Place shredded chicken breast on one side of tortilla. Top with shredded cheese and sautéed vegetables. Fold the tortilla in half and cook in a pan until the tortilla is toasty and the cheese is melted.
4. Serve with chunky tomato salsa.
